Birthday Festivities!

Hello friends! Hope you all had a fantastic weekend. Mine was a little crazy, but in the best way possible...there is absolutely nothing like Chicago in the summertime! Friday night I headed downtown to enjoy some appetizers along the river at Bridge House Tavern (I highly recommend the avocado buffalo chicken rolls). Then, I had a birthday celebration at one of my favorite patio bars in Old Town -- Benchmark! 



Saturday the birthday festivities continued with a party at Belmont Harbor (forgot to take pics...oops). Then, my boyfriend and I went to a tasting dinner at Untitled 111. I didn't take any pictures because I don't want to spoil this AMAZING new restaurant -- it hasn't opened yet, but when it does you're in for a real treat. The food was outstanding (I highly recommend the squab, roasted peach & arugula salad...truly... I don't think you could wrong with anything on the menu). After dinner, we bustled on over to Barn & Company to celebrate one of my bestest friend's birthday!

Of course... no weekend is complete without trying a new recipe. I woke up Saturday morning and concocted this dish in my head. It was just what I needed and absolutely delicious!  


Recipe: 

1 potato, cubed 
1/2 red pepper 
1/2 onion (you can add less or more depending on your taste) 
Red pepper flakes 
4 slices Canadian bacon, chopped 
2 sunny side up eggs (I make mine more medium) 

Cook the potatoes in olive oil, salt and pepper (to taste) until tender. Add onions, peppers and bacon. Let fry until crispy. 

Cook two sunny side up eggs. 

Divide potato mixture into two bowls. Top bowls with one egg each. Top with salt, pepper, hot sauce, ketchup and ENJOY!

Instagram: Weekend Recap

Hello... I hope everyone had a fabulous Memorial Day weekend! Mine was filled with family, friends, and lots of outdoor activities. Here's a little recap of my weekend via Instagram.... 

Friday night I had to babysit, which was great because I got to enjoy my favorite childhood movie snack ~ Swedish Fish! And, I got to wear my favorite turquoise pants for casual Friday.  




Saturday I whipped up some homemade apple, brown sugar and cinnamon pancakes (recipe below)...They were amazing if I do say so myself. Then, I got to enjoy a night on the town with one of my best friends! 



Sunday I went to my aunt's house for a delicious Memorial Day BBQ. You just can't go wrong with burgers, corn on the cob, potato salad and cream cheese fudge brownies!!!

Monday was my friends birthday BBQ at her amazing apartment with this awesome view of the Hancock building from the pool! Hot dogs, sangria, beer, brats and plenty of sunshine... I couldn't have asked for a better end to my Memorial Day weekend!!

Brown Sugar Cinnamon Apple Pancakes


1. Two cups of store bought pancake mix (add water sparingly...the box suggested adding 1 1/4 cups and it was way too much water) 
2. Add 1/4 cup packed brown sugar 
3. Cinnamon to taste... I love lots of cinnamon so I added about 2 tbsp
4. One small apple, diced 


Heat skillet. Add mix 1/4 cup at a time to skillet. Flip when bubbles begin to fill the uncooked side of the pancake.

BBQ Time


Last night, I enjoyed a lovely dinner on my friends gorgeous apartment deck and it got me so excited for summer! After all these cold winter days, I almost forgot how amazing Chicago is in the summertime. We had my new favorite cocktail - a skinny margarita recipe from Hungry Girl and it got me so excited to wear my summer wardrobe! Here's what I will definitely be rocking this summer.
